THIS BREAD IS BEING SOLD AS SECOND QUALITY.  THE HYDRATION OF THE DOUGH WAS MISJUDGED AND BECAME OVER FERMENTED.  THE RESULT WAS A MUCH MORE DENSE LOAF WITH NOT AS OPEN OF A CRUMB OR HEIGHT.  THE BREAD IS STILL PERFECTLY EDIBLE, BUT IT IS JUST A LITTLE DIFFERENT THAN NORMAL.  ON SALE FOR $2.50/LOAF!

Oatmeal has a wonderful way of making bread soft, and therefore this is the softest bread we make. A wonderful choice for those who think hearth baked sourdough breads are a little too tough for them. 30% of the dough weight is cooked steel cut oats in a 50% whole grain crumb. A great choice for sandwiches.

Ingredients: organic wheat flour, organic steel cut oats, sourdough culture, organic rye flour, RealSalt®, organic malted barley flour

*all breads contain some rice flour on the crust from dusting boards and baskets, and possibly olive oil from brushing dough boxes or bread tins.
